The need for controlling contamination at a new production line dedicated to gluten-free products for celiacs, resulted in the installation of Dycem CleanZone which provided an invisible barrier for both raw materials and operator’s access.

The chosen flooring solution forced the trolley to pass onto the contamination control mat when picking the goods up from the elevator, effectively removing wheelborne contamination and stopping contaminants getting into their critical production area. The trolley never leave the restricted area, this Is another key point not to forget.

The polymeric flooring was also installed at the entrance to the operators changing room to address the need for controlling cross contamination. This answer is more relevant as the invisible barrier controls both operator dedicated to both restricted production and the ones that will operate in the standard one.

The solution of the contamination control mat is as flexible as possible , just looking at the ‘T’ look realization of the corridor out of the changing room.

Risk management Gluten-free productions need to be kept completely separated from any possible source of gluten. In the present case study this meant that the gluten-free bakery plant couldn’t be integrated with a traditional bakery line of production. This is the main reason why after setting up a separated area for glut free production the owner decided to install contamination control mats at the income of row material and in the access ways for operators to production areas
